Ingredients

  • 1 onion (finely chopped)

  • 2 garlic cloves

Béchamel

  • 60 g butter

  • 60 g flour

  • 700 ml milk

  • 1 egg yolk

Cooking Steps

1️⃣ Prepare vegetables

  • Slice eggplants and lightly salt for 20 min to remove bitterness.

  • Rinse and pat dry.

  • Fry eggplant, potatoes, and zucchini lightly in olive oil until golden.

2️⃣ Cook the meat sauce

  • Sauté onion and garlic in olive oil.

  • Add minced meat and brown well.

  • Deglaze with red wine.

  • Add tomatoes, tomato paste, cinnamon, allspice, salt and pepper.

  • Simmer 25–30 minutes until thick.

3️⃣ Make béchamel

  • Melt butter and whisk in flour (roux).

  • Slowly add warm milk while whisking.

  • Cook until thick.

  • Remove from heat, add egg yolk, nutmeg and cheese.

4️⃣ Assemble
Layer in a baking dish:

  1. Potatoes

  2. Eggplant + zucchini

  3. Meat sauce

  4. Remaining vegetables

  5. Béchamel on top

5️⃣ Bake

  • Bake at 180°C (350°F) for 40–45 minutes

  • Let rest 20 minutes before slicing
