Garlic and Lemon Sautéed Fava Beans

This Mediterranean-inspired dish highlights the creamy texture and nutty flavor of fresh or dried fava beans.

Ingredients

  • 2 cups fresh fava beans (or 1 cup dried fava beans, soaked overnight and cooked)
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1/2 tsp red pepper flakes (optional)
  • Zest and juice of 1 lemon
  • Salt and black pepper, to taste
  • 1/4 cup fresh parsley, chopped (or mint for a twist)
  • Optional: grated Parmesan or crumbled feta for serving

Instructions

  1. Prepare the Fava Beans
    • If using fresh beans: Remove them from their pods. Blanch the beans in boiling water for 1–2 minutes, then transfer them to ice water. Peel off the outer skin.
    • If using dried beans: Soak overnight, then cook in salted water until tender, about 30–40 minutes. Drain and set aside.
  2. Sauté Aromatics
    Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 30 seconds until fragrant.
  3. Cook the Fava Beans
    Add the prepared fava beans to the skillet. Sauté for 3–4 minutes, stirring often, until heated through and slightly golden.
  4. Add Lemon and Herbs
    Turn off the heat. Stir in the lemon zest, juice, salt, and black pepper. Toss with parsley or mint for freshness.
  5. Serve
    Serve warm as a side dish or over toasted bread for a rustic appetizer. Optional: Sprinkle with Parmesan or feta.
