Garlic and Lemon Sautéed Fava Beans
This Mediterranean-inspired dish highlights the creamy texture and nutty flavor of fresh or dried fava beans.
Ingredients
- 2 cups fresh fava beans (or 1 cup dried fava beans, soaked overnight and cooked)
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1/2 tsp red pepper flakes (optional)
- Zest and juice of 1 lemon
- Salt and black pepper, to taste
- 1/4 cup fresh parsley, chopped (or mint for a twist)
- Optional: grated Parmesan or crumbled feta for serving
Instructions
- Prepare the Fava Beans
- If using fresh beans: Remove them from their pods. Blanch the beans in boiling water for 1–2 minutes, then transfer them to ice water. Peel off the outer skin.
- If using dried beans: Soak overnight, then cook in salted water until tender, about 30–40 minutes. Drain and set aside.
- Sauté Aromatics
Heat olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using). Sauté for 30 seconds until fragrant. - Cook the Fava Beans
Add the prepared fava beans to the skillet. Sauté for 3–4 minutes, stirring often, until heated through and slightly golden. - Add Lemon and Herbs
Turn off the heat. Stir in the lemon zest, juice, salt, and black pepper. Toss with parsley or mint for freshness. - Serve
Serve warm as a side dish or over toasted bread for a rustic appetizer. Optional: Sprinkle with Parmesan or feta.
